Capsanthin is a natural pigment extracted from Red chili, and is a natural organic compound with the molecular formula C40H56O3. It is a tetraterpenoid natural pigment extracted from mature Red chili fruits and belongs to carotenoids. Capsanthin is soluble in most non-volatile oils, partially soluble in organic solvents such as ethanol, acetone, n-hexane, grease and vegetable oils. However, it is insoluble in water and glycerol, and stable under visible light, but easily fades under ultraviolet light.
